Seasonal Recipes for Late Summer 


1. Grilled Corn and Tomato Salad 

Ingredients: 


  • 4 ears of fresh corn, husked 
  • 1 pint cherry tomatoes, halved 
  • 1/4 cup red onion, finely chopped 
  • 1/4 cup fresh basil, chopped 
  • 2 tablespoons olive oil 
  • 1 tablespoon balsamic vinegar 
  • Salt and pepper to taste 

 

Instructions: 


  1. Preheat your grill to medium-high heat. 
  2. Grill the corn for about 10 minutes, turning occasionally, until slightly charred. 
  3. Allow the corn to cool, then cut the kernels off the cob and place them in a large bowl. 
  4. Add the cherry tomatoes, red onion, and basil to the bowl. 
  5. Drizzle with olive oil and balsamic vinegar, then season with salt and pepper. 
  6. Toss to combine and serve immediately. 


This vibrant salad is perfect for a late summer barbecue or as a side dish for a family dinner. The sweetness of the corn and tomatoes, combined with the freshness of basil, creates a dish that captures the essence of summer. 

 


Lemon Blueberry Icebox Cake 

Ingredients: 


  • 2 cups heavy whipping cream 
  • 1/2 cup powdered sugar 
  • 1 teaspoon vanilla extract 
  • 1 cup lemon curd 
  • 2 packages (9 oz each) graham crackers 
  • 2 cups fresh blueberries 
  • Zest of 1 lemon 



Instructions: 

  1. Whip the Cream: In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form. 
  2. Prepare the Lemon Filling: Gently fold the lemon curd into the whipped cream until well combined. 
  3. Assemble the Cake: Spread a thin layer of the lemon cream mixture on the bottom of a 9x13 inch baking dish. Arrange a layer of graham crackers over the cream mixture, breaking them as needed to fit. Spread 1/3 of the remaining lemon cream mixture over the graham crackers. Sprinkle 1/3 of the blueberries over the cream mixture. 
  4. Repeat Layers: Repeat the layers two more times: graham crackers, lemon cream mixture, and blueberries. 
  5. Finish and Chill: After the final layer, sprinkle the lemon zest over the top. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the graham crackers to soften. 
  6. Serve: Slice and serve chilled. Enjoy the refreshing flavors of lemon and blueberry!
